Ingredients

  • Instant yeast1g cold ferment · 3g same-day

Method

  1. Combine the flour and water and mix until shaggy. Rest 20 minutes (this is the autolyse — it does half the kneading for you).
  2. Add the salt and yeast, then knead until smooth and elastic — about 8–10 minutes by hand.
  3. Divide into 250g balls, place in lightly oiled containers, and refrigerate for 24–72 hours.
  4. Pull the dough from the fridge 2 hours before baking. Stretch it gently by hand — never a rolling pin, which crushes the air bubbles.
  5. Top and bake on a preheated stone or steel at your oven's maximum temperature.
Pro tip: the longer the cold ferment, the more complex the flavor and the more digestible the dough. 48–72 hours is the sweet spot.
