BLEU 5-Minute Bread Recipe

Crusty, no-knead artisan bread with about five minutes of hands-on work, made with BLEU French T65 Flour.

Two crusty BLEU 5-Minute Bread loaves cooling on a wire rack

This is the easiest way to make bakery-style bread at home. Stir four ingredients together, let the dough rest overnight, and bake it in a hot Dutch oven for a crisp, golden crust and a soft, airy center. No kneading and no mixer needed.

Yield: 1 loaf | Oven: 450°F | Rest: 12-18 hours | Bake: 40-45 min | Pan: 6-quart Dutch oven

Ingredients

  • 3 cups BLEU French T65 Flour
  • 1½ tsp salt
  • ½ tsp instant yeast
  • 1½ cups room temperature water

Instructions

  1. Whisk together the BLEU French T65 Flour, salt, and instant yeast. Stir in the water and mix until a thick, shaggy dough forms.
  2. Cover the bowl with plastic wrap and let it rest at room temperature for 12-18 hours, until the dough is puffy with small bubbles.
  3. Preheat oven to 450°F. Place a 6-quart Dutch oven with its lid inside for 30 minutes to heat.
  4. Gently shape the dough into a round ball. Don't knead it. Place it on parchment and carefully lower it into the hot pot.
  5. Cover and bake for 30 minutes.
  6. Remove the lid and bake uncovered for another 10-15 minutes, until the crust is golden and crisp.
  7. Let the bread cool slightly on a rack before slicing.

Tip: Leave extra parchment hanging over the sides so you can use it as a sling to lower the dough in and lift the loaf out safely.

Store wrapped at room temp up to 3 days, or freeze up to 3 months.
